Plum win -how much raisins? also question on acid.

I read the posts I could find about plum wine. I was going to use some raisins to help with the body/acid/tannin since I found plums are mostly Malic acids. I can't really find online how much tannin Plums have, but I thought theyd have a bit. Was wondering how much raisins I should use for...

No spice flavor in my pumpkin beer

Yeh I just figured it would affect the flavor already instead of just the general aroma. I put it in for the last 2minutes of the boil.

No spice flavor in my pumpkin beer

So I used a pumpkin ale extract kit, 5 gallons, 60 oz of pumpkin. I put in like 1 tsp cinnammon, 1tsp allspice, .75 tsp cloves, a little nutmeg...which is supposedly a decent amount. I also put in a cinnamon stick in the bucket during fermentation. I also dumped in the spice packet that came...

    5 day fermentation lag

Interesting...that's a lot of yeast. I didn't realize the crazy effect the gravity would have..i had only brewed beers mostly. Looks like I'm going to have to put a whole smack pack into the 1 gallon that isn't fermenting at all though (i ordered another). Thanks.

    5 day fermentation lag

Well the SG on all my gallon meads was around 1.1. I didn't notice till later that Wyeast suggests it wouldn't hurt to triple the yeast for gravity's that high. I had split up 1 Wyeast smack pack into 4 separate gallon jugs evenly. 3 out of 4 are showing signs of light fermentation now. It...

No fermentation w/ liquid yeast - ideas?

I just read at the wyeast website that for starting gravity's above 1.08, yeast use should be tripled. I split 1 5gallon packet amongst 4 gallons, so this and the lack of a starter should give it a lot of lag time. It should be fine on nutrients though. This is a nice experiment though. I...

No fermentation w/ liquid yeast - ideas?

Well this is my first mead batch. I did everything in the sticky guide such as ferm-k and DAP stage 1. I pitched Wyeast Sweet Mead Yeast once the must temp was 77degrees or so. It is made for 5 gallons so I split it amongst 3 1/2 gallons. its been 17 hours, and I understand the fermentation...

My first mead batch - 4 flavors!

From the looks of all the recipes 3lb's honey per gallon is about the norm I thought, sometimes up to 3.5lbs. Well using the mead excel sheet in the sticky, I got the same OG as my hydrometer tests (around 1.1 OG) And no its not active yet..as of 15 hours. I'm not panicking yet, i know dry...

Best way to airlock a 1 gallon glass bottle?

I'm going to try my first meads by using some 1 gallon cheap wine jugs. I plan on trying maybe 3 different types. Any ideas on setting up airlocks for them for fermentation? I have some airlocks from brewing beer but wondering how you guys would affix them on the bottles. Also if you use...

    Acetaldehyde ruined my wheat ale

I was making a Raspberry Wheat Ale from a partial grain kit. Well, I sanitized everything fairly well with some LD carlson oxygen sanitizer stuff. I fermented my wheat ale in a clear carboy - I just wanted to monitor it this time since the first time I used a bucket. It was in the shade but I...

    bench capper for heineken bottles?

Cool thanks for the help. Yeh i'll probably get colonna for corking too, wouldn't mind doing belgian bottles or wines as well. Glad to hear of your experiences with heinekens or even boulevard bottles, sounds good enough for me.

    bench capper for heineken bottles?

hmm well it doesnt really crimp the caps well since it cant grip the heineken necks. We had 1 out of 3 cap but even that one wasnt even totally crimped on and probably would explode.

    bench capper for heineken bottles?

Just not fun biting the $75 bullet after shipping. Although then I can cap any akward smaller bottles. We also make wines and have no corker wine bottles, we use good old gallon cheap wine bottles. I probably should just suck it up after reading all the colonna reviews.

    bench capper for heineken bottles?

I tried to cap some heineken bottles today and obviously it didnt work due to the lip being so thin my 'red baron' hand capper couldn't grip it. I've read that bench cappers work fine since it doesnt grip anything, it just presses down. i assume this bench capperl will work fine? I...
