    Well if we really want to get technical, it varies at about 12lbs because the longer the bees have time to dry out the honey the denser it becomes, most bee keepers including myself don't usually wait till the end of the season to start harvesting honey, if you did the honey would be heavier. ; )

    I agree with LCE I like the fall honeys we get from the hives they are always darker and stronger in flavor. Darker honeys from what I have learned from the old time bee keepers have more maltose and dextrose as apposed to sucrose and fructose which leaves a richer taste and not the dry taste...

    oh man I love mead.

    I have my second batch of the season bottled up for about 2 weeks now (apple cinnamon mead) I opened a bottle for the hell of it and even after 2 weeks its good. I can only imagine how its gonna taste a year from now. yay! :tank:

    I always throw a cinnamon stick in my apple mead when bottling to help balance out that jet fuel quality. Just my own personal solution though. Better than letting it age for a few years IMO. But for a truly great mead better to let it age like everyone else.

    I am a second generation bee keeper and if you want a lighter honey get in in the spring, if you want a richer honey get in the fall. Honey in good indefinitely as wayneb said. They have pulled honey out of pyramids and tombs and it was still good. We would always lend our hives out to farmers...
