    Agreed. I'd drop the carapils, the flaked oats, and the acidulated (unless you need it for ph reasons). I like adding a little biscuit to my bitters, even when MO is the base malt; it adds a bit more of that bready/cracker taste. I'd also simplify the hops schedule. 60/10/FO, 60/15/FO...

    45 minutes is totally fine. Lots of people here do no-chill, or let things sit overnight to chill, and have had no problems. Wort chillers are nice and speed things up, but if you're cool with waiting 45 minutes, you're good to go.

    Yeah, I thought about that. I was considering using regular wheat and adding 1/2-1 lb of Crystal 40, but then I figured that all that chocolate malt would cover up whatever the crystal brought. Oh well. I'm still looking forward to it.

    Lots of people will probably refer you to Ed Wort's Pale. And for good reason! It's easy, delicious, cheap, and very forgiving. Makes a great base for any pale, and is also an excellent starting point for tweaking.
