    My go-to yeast of choice over the entire last year and half has been East Coast Yeast ECY10 aka Old Newark Ale. It ferments fast, clean, dry and it's highly flocculant.

    it's likely some sulphur or DMS or something from the lagering process you pick up. very common in imported lagers with a lot of pilsner content. not really an off flavor, buut part of the flavor profile.

    Victoria Mill... Will this work?

    I leave mine mounted where i crush. Disassemble what i need to and give it a rinse in the sink. The main body of it i just vacuum and wipe down. I am not even close to worrying about rust. The Victoria i have will outlast my children's lifetime and they aren't even born.

    I've got a 5.3cu ft as well. If your collar is high enough, and it looks like it is, you absolutely can fit 4 kegs if your CO2 is outside the keezer. Looks very good!

    You don't have to put them in a bag, but you should crush them pretty finely. On another note, traditionally a saison doesn't have any spices. The "spice" comes from the yeast strain.
