    LOL! I'm becoming a fanatic!

    I realized that my husband and I were officially fanatics when, last weekend, we bottled 2 batches (a Scottish and an American wheat), racked a brown ale to secondary and brewed up a bitter. :mug:

    You need to leave about an inch of air space to leave room for carbonation.

    I use a whisk to aerate. It's pretty cheap and pretty easy.

    My husband made an awesome smoked beef brisket on Memorial Day. It's always nice to have a meal that I didn't have to cook.

    I've lived in Utah nearly all my life and I've never met any polygamists (at least that I know of.)

    DME vs. LME - one gives better taste

    I've used both and haven't noticed much difference. Maybe I'll feel differently after I've made more batches, though.

    Do you always boil water before adding it to the must?

    I use bottled water. Sometimes the tap water tastes like chlorine. I rather not get off flavors from the chemicals and minerals in the tap water.

    TxBrew: I agree with you about Mexico. A year ago we took a family vacation and stayed at Playa de Carmen. The white sandy beaches and blue, blue ocean were absolutely beautiful.

    I think that doing a secondary is worth the extra time. Dang good beers without a secondary. Dang great beers with a secondary.

    Sanitised water and sugar

    Most grocery stores have a filtrated/sanitized water dispenser. I've never had any problems using that water.
