    Perry fermenting

    Rw Knudsen(expensive) has some that I've used with positive results. I also purchased trader joe's "cinnamon pear cider" which I really enjoyed, but it has a good bit of apple in the mix so it would not be a traditional perry. Good luck

    I made a quad/dark strong and dosed some bottles with a Chilean carmenere. About 1 -2 oz per bottle. When tasting I found there was a nice marriage of berry and tannin and beer.     Easy Way to Make Sour Beers (1 gal wort + dregs)

    Well tonight was good and bad... I cracked open my 80 shilling with JP and Orval dregs, it's tastes amazing. Some sour some horse it's tasty. But, the wife got a sip( who am I kidding... She got the rest of the glass) now my 1 gallon supply does not look as plentiful as it once did.

    I guess I will be the guy who bursts the bubble. DuPont does not have any Brett/bugs,however it is a great Saison strain if you can be patient enough.

    Allagash white clone? anyone?

    There is also a recipe from rob in Brew like a Monk. It suggests using " secret spice" which many believe to be chamomile. Also, it was recently posted in this forum that the bottle conditioning yeast is in fact the primary strain.
