    Can LME go bad?

    I just finished brewing a "pale ale" with 4 year old LME. The wort did not come out very pale, the LME was originally light but was quite dark out of the can. It tasted OK, and I added 1 lb of DME (also 4 yrs old), so we'll see -- in the primary now! At least I've used up all the old stuff...

    back after 4 years!

    Hey BierHerr, It turned out great (for the style, lotta rice solids in there!), dry and refreshing. Well, I bought the kit during the hot months, I guess I'll hold on to it for a few months now.... I realized I miss the IPA'a and imperial stout. That's next. -batch

    coffee anyone?

    Guess I'll kick this one off -- I have made one coffee stout; as I recall we added it to the wort during the boil. That was back in the beginning, so everything was good if you know what I mean. We were drinking and brewing, so the recipe was never finalized! The final product was great...

    Hi Everyone, After taking a 4 year break, I just brewed a light "mexican-type" ale last night from a kit (is that corona with w/o lager yeast? we'll see. corona ale might be a good name) It sure is good to have the smell of hops and malt in the house again! -batch

    Finally found time top brew yesterday after a 6-month haitus

    Ferment restarted at day 14 in Secondary

    I finally got a chance to bottle my IPA (Munton's yeast as well, weird resurgence of the fermentation). It was 6 weeks in the secondary, a record for me. But it hit a final grav. of 1.01 and it tasted great. Just goes to show, those yeasties know what they are doing. Might go back to US-56...

    Ferment restarted at day 14 in Secondary

    I had a similar thing happen for an IPA -- primary went fine for a few days; then I transfered to the secondary and it started up again after a few days. I was using Munton's ale yeast for this batch (first try using that brand). I am about to bottle, I'll let you know how it tastes...
