    Blackberry Wheat

My wife would like me to brew a blackberry wheat. A few years ago I did the extract version of the Apricot Wheat from Brewing Classic Styles and I thought it was a good beer (even with a few mistakes on my part). I would like to make the same recipe (all grain this time) and was thinking about...

    Cream Ale- Secondary?

On Sunday June 23 I brewed the cream ale recipe from brewing classic styles. It's my 7th all grain batch and I feel that I did all the steps reasonably correct. Within 12 hours there was active fermentation and within a few days there was a massive amount of foam at the top of the carboy. I've...

    Damp Chalk Hops?

I brewed a pale ale yesterday with columbus hops. I purchased the hops about 1 week ago and stored them in the freezer. When I cut open the package I found that half of the hops were powder and the pellets had the consistancy of damp chalk. They fell apart when handled. As time was not on my...

    English IPA Water ?

I had my water analyzed and my Bicarbonate is 285. I would like to brew an English IPA and understand that BOT water has virtually no HCO3. It seems that the best solution is to dilute with distilled water. I was hoping to try a 1:1 ratio to get a HCO3 of approx 142.5. Is that enough or should...

    What Fridge to Purchase?

I'm considering taking the plunge and buying a fridge for fermentation. I'd prefer to buy a new fridge because I hope to use it for a long time and if new it might have a decent warranty. Space is a big issue. I'd like to get the smallest fridge possible that I can fit a 6.5 gallon glass carboy...

I made a 2 liter starter with 2 smack packs on Sun June 6. I put it in the fridge Mon June 7 for a Tues June 8 Brew day. It rained so brew day got cancelled. I took the starter out of the fridge and put it in my basement for use next Tues Jun 15 (9 days after making starter). If it rains again...

    American Stout Questions

For my 3rd all grain I'll be doing an American stout. 1) What water profile should I shoot for, London or Dublin? 2) This will be my first time adding brewing salts. Do I add the salts to the mash? 3) If I'm using brewing salts, will adding 5.2 to strike and sparge water hurt at all? Thanks...

    soft water analysis?

I have a water softener and am planning on getting my softened water analyzed. From scouring this site I have come to learn that softened water is unacceptably high in sodium. Has anyone with softened water had their water analyzed? Thanks, Mike

    Water For ESB

For my second all grain batch, I'm going to do an ESB. I'm not so crazy about my water so I'm going to pick some up at Sam's Club or the grocery store. Does anyone have any suggestions for type and brand of water to use? Thanks, Mike

    i pod

I have an i pod classic. It is pretty old. When I listen to music it sounds normal in one earphone and very faint in the other. I recently purchased new earphones and have the same problem. Is is possible that there is an equalizer setting that can be manipulated to fix this or does it sound...

    oatmeal stout ?

I just bottled my first AG today. It was an oatmeal stout. OG was 1.056 (had to add 1.7 lbs DME due to poor efficiency). It sat in the primary for 2 weeks before bottling. My OG reading last pm and today was 1.040. The FG was supposed to be 1.016. I used Wyeast 1968 London ESB and did a...

    how long once milled?

    advice for a wimp

my storage room is the darkest, coolest place in the house, unfortunately it is in the basement. originally when i got back into homebrewing i would carry a 6.5 gallon glass carboy full of wort down a flight of stairs into the basement. after doing this a few times i realized that i am...

    How much for apricot wheat?

I usually use 3/4 cup or 5 oz corn sugar for priming for a 5 gallon batch. I have heard that for wheat beers you should go for a slightly higher carbonation level. Is it ok to use 1 cup (6.67 oz) corn sugar or will I be risking bottle bombs? Thanks, Mike

    Undercarbonated amber

I used my usual routine for bottle conditioning. 3/4 cup (5 oz) corn sugar in 5 gallons of beer. After sitting in my basement (temp varies from 68-72 degrees) for 3 weeks I tried one and the beer tasted very good but was under carbonated. Is it possible that if I let it sit a few more weeks it...

    Starter ?

Here's my starter routine. I use the term routine loosely since I've only done it once. I make the starter Sun am. Put it in the fridge Mon and and brew Tues (my day off). Last time I did it, it was a rainy day so I had to do a partial boil inside because the starter was ready. If this happens...

    Blow off tube

My next batch is going to be an amber ale(extract with grains). I will be using a starter and expect some pretty vigorous fermentation at first. I am planning on using a blow off tube. Do I keep the blow off tube on for the whole fermentation (approx 10-14 days) or do I replace it with an...

    bottling from primary

I am planning on Brewing an American Ale (extract with grains). Normally, I transfer the beer to a bottling bucket from the secondary fermenter. My last beer was terrible (oxidation?, contamination? bad recipie?) but the 3 previous ones were decent. Anyway, I am planning on mixing it up a...
