    Assuming 5 gallon batches Extract brewing is usually where you boil about 3 gallons of water, add a jug of malt extract, possibly some steeping grains and hops. At the end of the boil, you cool the wort, dump it in your primary and top off with remaining water to bring it to a 5 gallon batch...

    I'd put them in the fridge and cover with a towel. It sounds like your fermentation may not have been complete. Did you check the FG? What was the OG?

    Welcome to your new obsession. Yes you can use a grain or hops bag during the boil for your spices. You don't need to worry about contamination during the boil. It's during and after cool down that you need to have everything sanitized :mug: Are you brewing a Blue Moon type beer?

    More like the sugar content, which in the end will factor into your alcohol content. A gravity over 1.08 is pretty big and will take a while to reach final gravity.     Now I remember that is what the guy at the LHBS was talking about. However, I didn't use any Chlorine. I use an Iodine solution for cleaning. My bottle of iodine solution is probably a couple of years old. Does that stuff go bad? Maybe it was the water. I used Sparklets spring water.

    Patience and Hydro readings is where it's at. The Hefe is probably good to bottle, but an extra week or two isn't going to hurt. I would be much more patient with that stout. Once it's in the bottles, let those puppies sit for a couple of months before drinking. I'll be bottling my Hefe tonight...

    New Brewer from Apex, NC with a basic question...

    I suggest bottling this weekend. A little time will only make your beer better. After bottling, I usually wait three weeks to crack one open. After three weeks and testing one, I usually chill them for another 2 - 3 weeks, so the sediment settles and I end up with a nice clear beer.
