Never had any trouble with the keg going flat over time. then again, the keg never lasts that long... If I had to guess, I would say that at 25 PSI of Co2 it will probably be over-carbed and you will get a glass of only foam. But then again, soda lacks the proteins that beer has, so maybe not...

hey that was my post :) I can add that I tried carbing from 5PSI to 15, and 15 worked best, and 35 for the beer gas.

I've done this - polygyle, reiterative mash, whatever you want to call it. I brewed the 1850 wee heavy recipe in Greg Noonan's Scotch Ale book. He goes into detail about how it was done way back when. I can tell you that it did work but added a lot of time to brew day. Results weren't any...

I should add that the beer was left out at room temp but passed through a cold plate in my kegerator on its way from pin to beer engine. That cooled it down just enough.
