    2 IPA brew day

Long time no talk HBT! Had a 2 IPA brew day last Friday. A Black IPA that's my 10 year brewing anni brew and a rye IPA a buddy and I are splitting. The black IPA is using Midnight wheat and some pale chocolate for the dark malts, Tomahawk, Equinox, and Nugget hops with Wyeast 1335. The rye...

Brewed a beer with rosemary more than once?

Has anyone brewed a beer with rosemary more than once? I ask more than once because it implies you liked the result enough to do it a second (or more) time. I'm considering a rosemary stout--I think the rosemary may be too muted in a IPA application. I'd use the rosemary from the garden...

    FG/Attenuation in American Barleywine

Curious to where people like target their American Barleywine FGs? Obviously a big part should be depending on where the OG starts. I haven't done any barleywines in the past and brewed up my first one at the end of October (condensed recipe is below). I always get good attenuation in all...

    Blowoff

In the nearly sixty batches I've brewed I never have had blowoff like this. This is a 1.092 barleywine with 2 packs of rehydrated Nottingham fermenting in the upper 60s. Only downfall loss of 1/3 of a gallon.

    Kansas City Beer Store

Work will take me to Kansas City in August--and because of flight prices, most likely by car. Which is great! Why? Because I can stock up on beer I can't get in Wisconsin. Anyone in the KC area recommend good craft beer stores? Does Stone distribute to Missouri?

    Imperial IPA recipe

So it's been ages since I've been on the forum and the first time I've brewed since last November. What better way to get back on the saddle than an IIPA. Thought I'd throw my IIPA recipe I brewed last week out there to see what everyone thought and just get back into the forum a little bit...

    Simcoe Hops

So when I was doing an internet order I threw in 3 oz of Simcoe hop pellets because I never have used them. I've read a lot about a Simcoe/Amarillo blend, I enjoy Amarillo quite a bit so I could see that working nicely for me. Any thoughts/comments on Simcoe hops in an IPA? Or other ideas of...

    Hello again!

Hey it's been a while since I've posted on the forum, haven't had much time to be surfing, but still been brewing. Wanted to say hi to a few folks I talk with on here from time to time. I had an interesting email exchange with Dan Carey from New Glarus Brewing Co regarding treatment of...

    High Carbonate Water

Hey everyone, I recently moved to a new house, not far from where I was before, my water is even more alkaline that it was previously, a lot of carbonate without enough calcium to balance. Here is the water report, I am mainly served from well 5, but also from well 4. WELL# 5...

    Yeast Selection/Temperature New House

Hey everyone, We bought our first house in December, so November through much of February was spent packing, painting, unpacking, painting and painting. I can't wait to get back on the saddle and brew another batch, especially with a couple large consumption gatherings coming up. Our old...

    Victory Malt in IPA

Has anyone used victory in an IPA? I'm throwing together a recipe. Pretty straightforward, Maris otter, 1/2 lb crystal 40, 1 lb flaked barley, and I'm thinking 1/2 lb victory. mid 50s IBUs, lots of hop aroma and flavor. OG ~1.060. I think this would yield a nice hoppy IPA, the flaked...

    Wort Settling Time

After you've cooled your wort and whirlpooled with a spoon, wort chiller or whatever........how long do you let your wort settle before racking to your carboy, if at all? I've been a bit disappointed with how much wort makes it into my carboy before I start getting all the break off the bottom...

    Old Glory Pale Ale

This is my attempt at the Great Dane Brew Pub's Old Glory Pale Ale. In a blind taste test, I actually confused the two, the first that's ever happened. I used information from their website, which was Cascades are added 5 times, including dry-hopping. The grain bill was based on taste...

    For those seasoned hop growers....

do you trim back your rhizome roots each spring as described in the Brew Your Own article from this spring? If you don't get byo, it basically said in the spring before shoots are 6" tall trim the rhizome back to be about a foot long. Just thinking ahead, about 11 and 1/2 months ahead.

    AG Issues - Solved!

After my first AG I had two problems. 1) I didn't preheat my tun well enough and way off on mash temp. 2) Bad efficiency 58%. Today I did AG batches 2 and 3. To tackle 1) I heated my strike water about 10F higher than needed and let it equilibrate, that worked nicely, even in the 30...

    Hard Cider Wheat Beer

A friend of mine makes hard cider every fall. He buys ground apples from orchards, presses them and ferments them. Usually the batches are really good. This fall one of his batches turned much too dry for his liking, but otherwise fine and it's been sitting in a secondary since then. I...

    Temp Drop with Cooler MLTs

Hey everyone.... After doing partial mashes for the past couple years I finally bit the bullet and did my first all grain on Sunday. The brew day went pretty well, my efficiency was low, around 60%, but that's fine, I've got some ideas of things to do differently next time. I've got 5.5...

    Brewing is great!

What a great day of vacation yesterday. I started brewing at 7:30am, Fuller's ESB clone pitched at 11:30. Then started an Edmund Fitzgerald Porter clone, pitched the yeast at 3:30 and was cleaned up by 4:15! I've got two fermentors going nuts. And I must say this wort chiller is great...

    Aeration/Oxygen Equipment Question

Well Santa brought me a couple LHBS certificates and I'm going to want to buy either aeration/oxygenation equipment as I move to full boils and sooner than later all grain from partial mashes. I'm thinking something like these maybe: http://www.northernbrewer.com/aeration.html A couple...
