    Adding Candy Sugar

Will adding 1/2 pound of Belgian Candy Sugar to a 5 gallon batch towards the end of primary fermentation take the finishing gravity lower than without the addition? It is the Saison I Ale (WLP565) yeast.

    Ball Valve Funk Plug

I forgot to purge my boil kettle valve and it spit a nasty plug into my carboy. I got the plug out but..... Is there any chance this whole batch is not ruined?

    Saison Sour Mash Tech

After listening to the session from last Sunday I'm interested in trying a Saison (my first) with the sour mash tech. talked about. I'm contemplating a basic saison recipe, mashing in at about 148-150, doing a no sparge mash, and leaving the whole mash overnight in the tun. My tun is a 15...

    Nogne 100 finishes at 1.025

8 days. Is it common to get a different reading after agitation?

    Nogne 100 finishes at 1.025

I brewed this recipe and pitched a very health 2 liter starter. It had a robust fermentation but shut down hard at 1.025. Should I pitch some simple sugar to fire up the yeast again and try to drop it a few more points? UPDATE: After agitating the carboy and drawing a 2nd reading the...

Solid layer of funky something on top

I'm sure planning to drink it! Just wondering if the membrane is a common occurrence or if it is usually linked to bret or something?

Solid layer of funky something on top

I noticed as the fermentation approached complete there was a layer on top that seemed somewhat solid. I cold crashed and it dropped out but when I racked to kegs tonight I could see in the fermenter that the plug dropped as a unit. I've never seen this before and the beer attenuated to 1.005...

    Adding Coffee during fermentation

I just been reading about alcohol extraction for these kinds of ingredients and it sounds like a good way to do it. I've added it to the end of the boil before but was just looking to try something different.

    Bubbles in my beer line?!......!!*%&#@!!

I have a similar problem... My problem occurs with a sanke keg. Occasionally, I buy a 5 gallon for special occasions. Friday I bought a New Belgian, Hoptober for Poker Night. My sanke tap was getting a little beat and I had a pro-brewer come help me with it. He thought I had a bad tap that...

Small "carbonation" like bubbles in fermenter??

I brewed a 10 gallon batch which I put into two 6.5 gallon carboys. After 7 days I racked one carboy into a 5 gallon secondary which was nearly full leaving only a small bit of head space. Fermentation was slow by then but still active. 3 days later I dryhopped both carboys. the 6.5...

    Temp Drop - Yeast problem

My latest 10 gallon (in 2 carboys) batch was fermenting nicely in a large cooler with water to act as a temp buffer. It was brewed on Wednesday and I pitched 1000ml of good starter into each carboy. The fermentation took of nicely but the temp began to ramp up from 68 yesterday as it was about...

    AHA Competition Entry Story

I brewed an American Brown Ale a few weeks ago that I really liked and decided it should be my first ever entry into the AHA competition just to see what the judges would say. However, I don't have a beer gun or other counter pressure filler so I've been letting the time slip by. Last night I...

    J.'s Moose Drool clone attempt

After 10 years I finally made the leap. I converted a 15 gallon rolling cooler, with a center drain using a 3/8 ball valve and a stainless, braided sleeve. I decided to start with the Moose Drool clone from the Jamil show and set up Beer Smith to do a 10 gallon batch. My grain bill totaled...
