    Stout/Porter with alternate base malt

    So, I went down the cellar, and it looks like I have about 4lbs of 2-row left. ruh-roh. I've been thinking about doing a stout with an alternate base malt... I have a bag of Vienna/Munich/Pils. Anyone ever done a vienna based stout? Does it make a difference? Good? Bad? Any thoughts?

    Hop choice for Vienna SMaSH

    I just finished brewing a light ale and pitched yeast today. I am planning on adding about 40 Oz of frozen raspberry. How do I go about determining final ABV of the beer? Is there any good way to determine the sugar contribution of fruit?

    How the heck do I clean up Candied Sugar

    I was making some candied sugar for a belgian. Boiled about 4 lbs to amber. I made a foil tray on the counter for cooling. The tray collapsed, and I lost about 2.5 lbs of sugar to the side of the counter, and floor. I've been scraping it off with a spatula, but anyone got any better ideas?
