    i had the same issue with my Belgian wit... i hit 1.068, which kinda sucks because I didn't make a starter. I'm chalking it up to the fact that my primary wasn't fully mixed up, meaning more of the sugars were at the bottom. I also brewed with honey. Honey is very variable in it's sugar...

    American IPA Dogfish Head 60 Minute Clone (AG) & Extract

    ^ maybe the different strain of yeast? i brewed last sunday as well, and my SG has been pretty constant between today and yesterday... I moved to secondary tonight. Gonna wait a few days to make sure all airlock activity is 100% done, then add in the dryhops... it was delicious though...

    hmm... american hefe. I didn't think about that, but it could work... btw, the dogfish head 60min is looking spectacular. color looks perfect and it's got so much hoppy aroma already, can't wait to dry hop it. Hit the recipe SG perfectly too.

    ^yea, that's definitely a good suggestion... it popped into my head right away, for the obvious reasons. I haven't had it in a really long time though, so i kinda forgot what style beer it was. seems like that's top on my list right now.

    I'm brewing an extract version of the Dogfish Head 60 min IPA as we speak. (letting grains steep right now) My LHBS had Pacman yeast, so i grabbed two activator packs. (no starter) I was initially going to make a belgian white after this IPA, but i'm thinking of reusing the pacman yeast...

    how long should i let it "condition" in the bottle? it's been sitting in a carboy for about 1.5 months now, and I want to bottle. Can I start drinking right away, assuming I don't carbonate? I was only thinking of carbonating half of the batch.

    Thinking of starting to brew my own, questions.

    i'm in an apartment with an electric stove and have had no issues. granted, more space and a propane burner would be nice, it's by no means a requirement. i keep my fermenter wrapped in a towel in a closet. Not a big deal. What seems to take the most room, is the process of bottling.

    Canning Your Beer?

    i wouldn't look into it for homebrew... the "green" aspects are moot. You're not shipping. You're also re-using instead of recycling. UV light is just about moot too, as long as you're storing in a closet or basement or something.
