    I added some energizer at the beginning. Still extremely new to the hobby so my plan is to let it age for a few weeks then bottle, and age most for the summer. This is what it looks like today.

    Decided to try my hand at making a Maple Mead (acerglyn?). 1 gallon batch, using approx 2/3 of a litre of Maple syrup and about 1kg of wildflower honey that just arrived. Added about 1-1/2 cup of strong Earl Gray tea, yeast and energizer. S.G Is 1.10 on the dot. Fingers crossed.

    Really new to this, ended up buying 3kg of buckwheat honey to make a mead. When tasting it I thought coconut may go with the chocolate notes. Hope I did not make a dud. 2litres coconut water, 1.5kg buckwheat honey, topped off with about 1litre spring water. 71b yeast, starting gravity of 1.080
