Sounds like a good plan. I would sure mash high on the new beer and you can use just a tiny bit of hop or even lambic hops to keep ibu’s low. Keep unfermentables relatively high if you want more Brett/etc flavors. I have two half barrel sanke keg solera projects now and the trub isn’t a bad...

Same here - have been using it for a few dozen batches so far and happy with the response from the couple celiac friends who can drink it.

Post how it comes out with those changes. its simply a great brew.

8-10 kegs, but did go thru one for about 2 kegs when I first got started.....

For everyone interested in a great summer brew, this is it. Already drank the head here but it’s about perfect. Tweak as you like (I like more oak) but be ready to go buy grain again. Thx to op for sure here. We’ve done several batches of this and keg or bottle, it comes out great.

mmm... not going back to see what else we brewed this year, but in the last 5 days, added the following: 5 gallons brett azacca ale + 4 gallons no-boil NEIPA + 5 gallons le petit prince clone + 5 gallons citra IPA, so 996+19=1015
