    Well, that's a smackdown. I have not idea how to even infuse a wort or mash with smoke. I guess all I can reply is that I have been to Weltenberg a couple of times. Man, am I going to enjoy this hobby.

    All sounds good save for the sours -- not a big fan, guess I lied when I said I'll drink any beer. However, while sours are off my list, I do actually like rauchbier and am guessing no one on this forum has ever tried that? That's probably a PhD level beer.

    Questions about telling when wash(?) is done fermenting

    A large-ish bag of grain and separate small bags of hops and yeast. That bottle bomb thing is a new one for me. Exciting. Does the step of adding an ounce of dissolved sugar after rack caning it out of the fermenter and before bottling to develop carbonation sound right?
