    There is no real scientific data out there that says kombucha is good for the heart. (It is all maybe as of now) More tea would mean stronger starter tea with a darker colour.The polyphenolic compounds in tea are the food for your kombucha culture to eat.

    Carbonating after chilled?

    Normally we add flavours/sweeten it after the first stage of fermentation. The tea is then left to ferment further and imbibe the added flavours. In your case you have to check if it has not over fermented already. If not go ahead and add your flavours.
