    Opened a taster bottle of a quad we made a few months ago. It's good but I'm certain it needs to age more. Also tried an English bitter that was just kegged. It is...a crusher.

    Been drinking a gingerbread porter, served on nitro. Fairly easy drinking for a spiced beer. Clocks in at 5.5% abv. Mostly though, been dipping into the single malt Scotch lately on these cold rainy nights we've been having here.

    What I did for beer today

    Kegged a Gingerbread Porter. Since we put it on nitro, we were able to drink it same day, so we had a few while brewing an English bitter.

    We are going to make a spice mix and dose both the fermenter and the keg, which is how we make our pumpkin ale, and that one comes out pretty nice.

    What I did for beer today

    Set up the freezer to function as our "cellar" for aging our big beers in kegs. (Nevermind that our brewery is actually sitting in a sort of cellar.) Also gave the electric system a good cleaning cycle with the pump and CIP ball. My wife surprised us with a bowl of tater tots and some spicy mayo.

    Homebrew can be vastly better than store-bought. I went to a homebrew club meeting once where everyone was sharing their current brews and most of them were far and away better than anything I was buying.     Not a damn thing. Some dudes buy boats or fast cars. I buy shiny, fancy homebrewing equipment and high end ingredients for a tiny fraction of that.
