    Just so I'm clear, so you would rack out of a carboy into a bucket (I think I have some that have a spout on it) and then you bottle out of that bucket? It seems that would introduce more oxygen. Is that not a concern if you bottle them quickly enough?

    That's not a bad idea! If nothing else, I plan on doing a 5 gallon this fall and I really like the idea of doing 5 different secondaries to experiment with different flavoring.

    The instructions I have say to ferment for 10 days. Then it has be boil some sugar and drain the juice and mix with it and then bottle. I assume you add more sugar so that it will carbonate while it ages in the bottle?
