    Overpitching/Underpitching

My last beer's FG was 1.024, and the expected FG was 1.011. I don't mind it being off a little, but that seemed excessive to me.

    Overpitching/Underpitching

What constitutes 'overpitching'? I try to build my yeast starters to just slightly over what brewersfriend calculator tells me I need for my batch. I'm seeing that they don't ferment out to my expected FG. How far over should I go before the extra yeast will affect the final flavor and texture...

    Not reaching expected FG

Mashed at 154/155 for 60 minutes. It's a basic cream ale recipe. Pale ale, vienna, and carapils. I took readings with both hydrometer and refractometer.

    Not reaching expected FG

On my last 15 gallon batch, my OG was 1.040. I used 3 White Labs WLP001 after a 2 step starter- 2L 1.036 and then another 2L 1.036- which brought me to 550 billion cells. 1/2BBL size issue

    1/2BBL size issue

Here's my process: 30Gallon Spike HERMS System (30 gallon HLT, MT and BK) 1/2BBL SS Brewtech Unitank If I want to brew a big winter beer in the 11-13% range, let's say I'll need around 40lbs of grain, for the sake of argument. If I go with a 1.5:1 grain to water mash ratio, I'll need roughly...

    1/2BBL size issue

I have a 30Gal Spike System and 1/2 SS Brewtech Unitank. I want to brew a BIG winter warmer; somewhere in the 11-13% range. But from all my calculations, in order to get an ABV that high, I'd have to use somewhere in the neighborhood of 50+ lbs of grains. From what I'm seeing, either I won't...
