    Adding new yeast strains and bacteria to your SCOBY?

    Update: I added probiotics in capsule form to the brew. As I read elsewhere, this effort might be pointless since new bacterium strains can't survive in the high acidity of the brew. Unless I send a sample of my SCOBY pellicle to a lab, I won't know for sure if the experiment was a success...

    Great thread! Any updates? What happened since 2012? :p I think that you are all asking the right questions. From your feedback, we just need to test each new batch to determine which live cultures are present. From there, we can attempt to add new strains of bacteria after each iteration...
