    Recommended Yeast Strains in Recipes?

    How important are the yeast recommendations in recipes? Specifically, I want use S-04 in a dry Irish stout recipe that calls for US-05. Any reason why I shouldn't? Do the base malts have anything to do with the recommended yeast strains?

    Thank you all for your input. While there are still a few bubbles coming from the blow off tube, I think I'll change it out and let it sit until I get back. Was a little concerned about sitting on the yeast cake too long, but should be more concern with a bottle bomb situation.

    I've found crud in my bottle filler. I have one now that I can completely disassemble to clean and sanitize. I'll keep an eye on that spring.
