    You are right...i guess I should have looked at the attenuation rate for that yeast strain (sorry, rookie mistake!). I will try the US-05. If it doesn't knock it down a bit more..oh well. I'll still have 5 gallons of beer! Thanks!

    Yep! Stopped by after work last night and grabbed my 5 GAL. secondary...sorry..."conditioning" carboy. Making a Cherry Porter right now so I'm going to rack to the secondary carboy for a couple weeks. 3lbs of cherry puree for the Porter. Hopefully 3lbs will give it a very slight cherry note...
