    Yes. Pretty much, even if only for 2 hrs. Running a vertical cabinet pellet smoker, usually has quite a bit in it.

    I use a variant of this. Smoke at 225f until 150-155IT. Then wrap, put in 350f oven to power through stall, then unwrap, back into 225f smoker to "rebark" until 202IT.     50 lbs, went into smoker to dry Jan 18, smoked Jan 20, 21, 22. Rested in smoker 2 more days. Sliced and vac packed Jan 25. Smoker never above 38f.

    Brunwater trouble

    I just copied all your numbers available to me, I believe your Brunmalt should not be a roast malt, only 130 EBC. Moving it out of roast malt gets me an estimated mash pH of 5.23 with NO baking soda. 0.1g/l BS puts my pH at 5.4, Ca and bicarb still a little low. Don't know if this helps.
