    Howdy, personally I use campden tablets (potassium metabisulfite) and potassium sorbate. Probably overkill doing both but it works and hasn't affected the flavor. Also pretty new but it worked on several batches thus far. Good luck!

    @SKBugs, I went to a tea shop for dried whole petals, I was told there that 1 oz can make about a gallon of tea.

    @bernardsmith, ok I can use the buckwheat honey for a simple ale mead (1lb honey to 1 gallon). Clover honey is light and cost effective, will that do well for the hibiscus?

    Stirring during primary

    New to mead making and I ask a lot of dumb questions but I find this forum to be very informative and friendly to new mead makers. Lately I've read that stirring daily during primary keeps the yeast healthy but others say it's a no go and can ruin the mead nor allow it to settle towards the end...

    I want to add dried juniper berries to a mead batch but I don't know when to add it in. Primary? Secondary? How long do I leave it in for? I also have dried rose petals for a different mead for aroma. Should I make a tea out if it or add the rose petals in Secondary? Probably use a wildflower...

    Acerglyn ratio?

    Wanted to make a simple acerglyn 1 gallon for the first time. What is a good honey to maple syrup ratio? I usually use 3 to 4 pounds of honey for show meads. Would clover honey be best to allow the maple flavor to not be overwhelmed? Any advice would be greatly appreciated.

    What to do with my first batch?

    I am new to ciders as well but I found that putting sanitized glass marbles in the secondary helps take up the head space and won't affect taste.

    Thank you all for your advice. I will be careful to follow the JAO recipe, but can I bump it up to 3 gallons and add ingredients proportionally? Also realized honeysuckle grows all over where I am, can that be added to a mead?

    Thank you bernardsmith. I will change up my yeasts. My next batches I was going to try a JAO and either a melomel or cyser. Brand new to this but I find it very fulfilling when it turns out right. Hope to turn this hobby into a career one day, thank you again
