    I make wine to use up the extra fruit in my yard. Turns out people really like my wine, so now it's also made because it's delicious!

    Yup - it's called variety, progress. Why be shackled to an 500 year old German food law that is horribly out of date? Most people don't care about it anymore - heck, it restricts the use of CO2 - and it's time the law be updated or outright abolished.

    Sounds like you're only getting conversion (or mostly) from your pils not from the wheat. I'd suggest ensuring that your wheat is actually malted and that it's ran through your mill properly. I highly doubt it has anything to do with a stuck sparge - I feel you'd notice the lack of water coming...

    4. I've used WYeast FF to make a straight up apple cider with great results - it was everybody's favorite, actually.
