    Does this really make six gallons of beer? You're only using six gallons of water between the mash and sparge water, so I would expect the actual yield to be significantly less - how much do you generally get from this recipe?

    The only preservatives were ascorbic acid - I've used the same brand cider before and it worked well enough. No, I basically just emptied the lees (and a bit of liquid above it) from another batch into a tupperware container and put it in the fridge.

    The carbonation gave it just enough bite to counter the sweetness - quite nice. I get a lot of banana, not much clove. Overall deliciousness! Very nice recipe! Just the way a Hefeweizen should taste.
