Peach Mint Larger - To Fruit or not To Fruit....

@WayFrae - I'm not dead set on a larger... I'll check out that yeast. 64 F won't be a problem at this time of year - if anything it will be a bit cooler down in the basement (I'm in the Northeast). Thanks for the recommendation!

    Hello World!

Yes. The old 100 bottles of beer song... I've bottled 10 gallons worth of beer by hand. Time consuming but not too difficult.

    Hello World!

I've been homebrewing off and on for a couple of years. Masters in Chemical Engineering, so I'm into the technical details a bit more than your normal novice. I can brew up to 15 gallons at a time, but typically do 10 gallon batches, as I give much of what I make away to family and friends. I'm...

    Non-Alcoholic Beer

I don't know how they do it, but the Athletic tastes like beer, and it's less than 0.5% ABV. If they are fermenting at low temperatures, then the yeast aren't going to convert much of the sugars to alcohol, but I'd imagine it would be sweet as high heck as a result. Of course you could distill...

Peach Mint Larger - To Fruit or not To Fruit....

So here's my question: To use fruit or not? Last year I made a peach-mint larger that came out adequate, but needs some tweaking. I used peaches in the primary to impart a peach flavor and it worked well, but they sucked up a surprising amount of liquid in the primary, resulting in my 2.5 gallon...

    Cherries into Primary?

I'm also working on a chocolate cherry (milk stout). I have a can of dark sweet cherries but haven't found any sour cherries readily available. I'd love fresh cherries but they aren't in season. OG was 1.046 (I missed my target since i could only boil 3 gal and had to dilute it down) but I also...

    Loss of flavor (spice proportions)

Thanks. I'll keep that in mind. For what it's worth my current creation is a chocolate cherry milk stout. It's in the primary as we speak. I'm was going to add the cherry and a 2nd infusion of chocolate into the secondary - but perhaps I'll try a tincture for the coco powder addition right...

    Loss of flavor (spice proportions)

So I brewed what I called an "Apple Pie Larger" for thanksgiving I used fresh apples and some cinnamon and nutmeg for flavoring. It tasted fine going from the brew kettle to the primary. Still fine going primary to the secondary. Then something went off the rails. The final product is...
