    COLD MASH process/recipe development thread

Have not, can't find it in 'Home-brew Con Seminars' tried NEM, cold extraction and cold mash in the search area. I read the PPT above, but it is not that great on its own. But from what I am gleaning, it's interesting to see how it is not only the lower gravity people are after but different...

    Non Alcoholic Beer

But if you could drink the beer all gosh darn day long and still live a normal and productive life, than doesn't that have some allure?

    COLD MASH process/recipe development thread

Cudos to those who founded the Genesis of this method - you know who you are if you are. Please search past threads on this topic if you want to know more than what is below. I'll state that the Baseline method involves: steeping malted and crushed grains at least 12 hours in a fridge with...

    Non Alcoholic Beer

Hello all, wanted to share some experience I had working with someone that now makes 'beer whiskey' by distilling alcohol from beer using a vacuum process. The lower the atmospheric pressure the lower the evaporation temperature of alcohol from the solution. So, he can distill the alcohol at...

BlackSwaen Honey Biscuit Malt - Anyone used this?

I use Honey Malt all the time, I like it but this Swaen sounds interesting! I use the common Honey Malt which is the Gambrinus. I'm careful with it. For a 12 gallon batch of Saison, I use 18 ounces on honey malt to 15# of pilsner and 2# of flaked oats/barley. I'm finding it a tad too sweet...

Saccharomyces boulardii and East Coast Yeast

The folks at RVA said they don't know if what they have is Boulardii. I received the BB Chardonnay, will give it a go. Seems like we can't assume that a strain is POF+ and killer until we put it to the test. Killer or not, but would love if it has the POF+ flavor characteristics.

Saccharomyces boulardii and East Coast Yeast

Going to try to order some Bootleg Biology Chardonnay and RVA 263 to try these out.

Saccharomyces boulardii and East Coast Yeast

The ECY's description says, "From a small but fascinating producer of Saison." so I guess that is Fantome, huh?

Saccharomyces boulardii and East Coast Yeast

Thanks Mr. British Person whose name was hijacked. I'm going to order some of the Chardonnay. I also wrote to Nick I at TYB and he said that a brewery hired them to isolate some strains and brewed a beer that was good, but that he does not have further plans. (Perhaps that brewery is gong to...

Saccharomyces boulardii and East Coast Yeast

Hello, I tried to get some East Coast Yeast in the past - home-brew size and it was a pain, had to buy it and then wait a year for it to come in stock from this one home-brew shop in Jersey. Anyway, ECY has a yeast that claims to be Saccharomyces boulardii, ECY03B, which seems to be the same...
