    Thanks, I'll get some of the dry malt extract, and mix either table sugar or honey with it depending on what flavour I'm going for. Honey is $10/kg where as brew enhancer is $20/500g

    Hello, I was going to try out one of the Coopers extracts, but the brew enhancer they tell you to get with it is fairly expensive. I was thinking using either honey or corn syrup to bring the gravity up with the extract might be alright, but I am unsure. Has anyone else given this a try?

    The yeast might not even start fermenting with such a large amount of sugar present, you might want to use sugar breaks. Some yeasts can go up to 22% ABV if you are really careful about your nutrients, temerature, etc. I don't think you're going to go higher than that without distilling it.

    I'd give it a shake and wait another 24 hours. If it doesn't start up by then, I'd add new yeast. My 5 gallon batches always take 24+ hours before they show signs of fermentation. You might want to wait for someone else to weigh in though, as I'm no professional. Good luck!

    I've made a raspberry melomel and it cleared in a month as well. Though I added them in primary.

    Has anybody ever tried to burn their honey a bit (like when making a brochet) and brew a beer-ish thing with it using hops and beer yeast? If so how did it go? If not how do you think it will go?

    Thanks guys, I know it won't make the best mead. I think I might want to add another Kilogram of honey, I just prefer a dry mead. I definitely want to try to make a Bochet, I am glad that I don't have to buy expensive honey for that. But it was great to have your guys' input, Thanks.

    So I have been thinking about making the following mead: 4kg Cheap GV Honey 2kg Raw Wildflower Honey Champagne Yeast Yeast Nutrient Topped up with water Do you think this will make a good mead? Or will it be too flavorless?
