Making cheese, yet another new hobby

I want to get started with doing cheeses, but SWMBO isn't on board with the whole "home made" everything that I'm going for, with our own wine, beer, and cheeses. I'll get her on board within a few months, so I'm not worried. Keep us informed, I want to know as much as possible before I start!

    James Bond vs Jason Bourne

If Bond had known he was getting into a fight, and was prepared (as is the Bond way...), then he would win. But, street fight with newspapers, paperclips, and coins? Bourne would have him stapled to a wall somehow and still taken a train ride around the country with everyone looking for him.

    Honeydew honey?

I was just reading over the wikipedia honey article, and noticed a largish section on "honeydew honey". Has anyone ever turned it into a mead or anything similar? Out of curiousity, how does it turn out?

    Make shift Airlock?

Also, I was talking to an old school homebrewer at work the other day. He was saying they used small diameter tubes and sealing wax to create an airlock. I would simply add that to your tube as a way to positively seal it.

    Swmbo

Actually we went through a break in college and it worked out pretty well, meaning that I gave in. Just talk it out and you should be fine.

    Bung fell through

Flip it upside down and use a pair of hemostats or needle nose pliers and maybe a long razor blade to cut it apart. But it'll be easiest to just flip it upside down.

What to do with 6 carboys?

Give a couple to me, make some mead and some more apfelwein!

    crazy recipe

I think you may have an issue with the acid, but try it! Just do a single gallon and let us know! I'm about to do a apple/hefeweizen thing, so just roll the dice!

    Shot to the manhood

Man, that sucks. The worst I've ever seen was when my brother somehow managed to hit himself during a golf swing (yes, he may in fact need a helmet for daily life...). He dropped to the floor and my dad and I did as well from laughter. He has replicated that injury multiple times playing...

    Apfel Bier?

Ok, just tossing around an idea here if anyone wants to speculate with me... What if instead of water, you used pasteurized apple juice with a hefeweizen extract kit? I'm VERY tempted to try this during the upcoming week. Any experience? Any words of wisdom?

    Hops in my cider

Very interested myself, I'm looking for more of an apfelbier than apfelwein. Any info?

    Apfel Bier?

You too! We should do a bottle swap...

    Apfel Bier?

Two heads, sounds like a plan. I'm kinda stuck with this: 5 gallons Tree Top Apple Juice 3.3# Wheat Extract syrup 1 packet SafAle WB-06 Cooler fermenting around 65*F I'll let it go all the way and just give it a try... why not, right?
  15. R

    Apfel Bier?

Yeah, I've got Safale wb-06, and will be buying a couple 3.3# cans of Munton's wheat. 6, did you straight dump the DME in or put it in boiled water? I'll eventually go to hopping it, but I wanted to stay relatively safe at this point of the game. I'm still pretty new to this, and this is my...

    Apfel Bier?

I have been reading around here for a few days, and have really been impressed with the amount of knowledge here. I have just finished my first apfelwein (gets done with bottle conditioning tonight!), and am ready to take it a few steps further. Now, I'm looking to aim more for an apple beer...

Favorite beer to drinking during economic collapse

Well, apple juice is still pretty cheap, and not likely to run out or become too scarce. That, dextrose and montrachet are pretty affordable. I stick to homemade apfelwein. And I'm a .308, 45 acp, and 12 ga magnum kinda guy. And i'm stocked up already.

It's Friday, what have you learned this week (ed. 08/29/2008)

I learned my General Manager's IQ is the same as my tire pressure. "Incoming hurricane and we're in the route of evacuation for 300,000 people? Let's put more rooms under renovation!!"

    Birmingham, AL beer

My favorites are On Tap (Inverness) and The J. Clyde. Great people, great selection (for Birmingham anyways...). Anyone else?
