    Alright, I flattened one beer that's already carbonating, checked two others in secondary, made an 8 oz DME batch, and checked against RO water.     Wow, I never realized that. I will have to try the iodine. My gut reaction is that I'm converting since the beers taste sweet to me, but this will give me another level of detail. I love data, so I'm an easy sell on something like this.

    I don't. But I do check pre-boil gravity and volume. My last two mash efficiencies have been 90% and 93%

    I used to agitate, now I have a wand. I generally turn the O2 on just enough for flow and stir the wand near the bottom until the foam fills the dead space in the fermenter. That usually takes 5 minutes or so. That's got to be plenty, right? I have had some really quick and strong activity...

    Probe is in the tube, right after the element. My primary suspect is the thermostat also. I considered running multiple steps like 140 & 158, thinking that would allow for the large temp swings. But that still wouldn't help if the element is getting too hot. Thanks for the input!
