Funny Taste w/ S. African Shiraz Kit

I've made a couple of kits now with good results, and this last kit I fermented in a temp controlled freezer at 70F (hoping to have really nice results). I don't know if it's just the way the wine is supposed to taste, but my "blink" response is wow, this tastes like grape juice and wine at the...

    LHBS Bentonite Okay?

Was wondering if I can substitute LHBS bentonite for what comes in my wine-expert kit? I screwed mine up by adding hot water to it instead of the other way around.. ended up with a nasty clumpy mess that I ended up throwing out.

    Potassium Metabisulfite a yeast killer?

Ok-- i've made several selection wines and haven't seen this problem. i'm getting a little worried. i've always used one-step for sanitizing, but the HB store guy coaxed me into using the metabis. i don't recall rinsing it out all that well after i sanitized. i'm trying to ferment at a...

    Chest Freezer for Fermenting

i was tossing the idea around of using a portable AC unit for maintaining proper fermentation temps.. well, what do you guys think about a chest freezer? like a 5.0 cubic foot one (door opens on top)? what is entailed in getting it to run at warmer temps instead of the freeze zone? is it...

Portable AC unit for fermenting/aging wine & beer

i've been tossing around the idea of getting a portable AC unit from home depot. the one i've been looking at runs about $400 and is rated for around 8-10,000 BTUs. i'm planning on sticking it in the laundry room as i'd be able to tie the drain into the washing machine drain and the exhaust with...

    Different carbonation levels between bottles

howdy, long time no post. i was wondering if anyone had input regarding unven cabonation (between bottles). when i go from secondary back to the old bucket with my carbonating solution, i've always wondered if there's enough time for the sugar solution to completely disperse throughout the 5...

Independence Bootlegger Brown Ale (Austin, TX Local Brew)

Has anyone had this brew?? It's really awesome. Chocolatey, smooth, creamy, DARK. We were at the Alamo Drafthouse last night watching a flick and i ordered up one of these bad boys. About 6 months ago i got into "St. Peter's Irish Cream Stout" but I think I like this one better, AND it's a...

    Strange Smell?

I started my first wine kit last week. So far, all seems well. Nice bubbling action. I was wondering though, what should it smell like? I wouldn't exactly say it smells foul, but it's not exactly pleasant. It has a smell similar to when beer is fermenting, but of course different--- maybe...

Been a while since I last posted--- about a month and a half ago i brewed up a cream stout clone ("St. Peter's Irish Cream Stout"). well, it's been aging about 3 weeks, and all i can say is..... DAMN IT'S GOOD!!! :cross: like a guiness, with that "cream" taste, little chocolatey...

    Adding Malt Extract after boil

was wondering if you can wait for a boil before you add the ME. for all my batches (4 so far) i've added the ME to the water after steeping the grains (155F) and then brought it slowly to a nice boil. Does it really matter?
