Funny Taste w/ S. African Shiraz Kit

ya, it's only been about 3 months. i'm thinking as well that it needs time, especially since it's aging at 70F instead of my usual 80F. thx

Funny Taste w/ S. African Shiraz Kit

I've made a couple of kits now with good results, and this last kit I fermented in a temp controlled freezer at 70F (hoping to have really nice results). I don't know if it's just the way the wine is supposed to taste, but my "blink" response is wow, this tastes like grape juice and wine at the...

    Hawthorne Wine.

sounds interesting to me because Hawthorn berries are a cardiotonic, used to treat hypertension. how much are the berries costing you? as for taste, i've never tasted the berries.. sounds pretty cool though!

    LHBS Bentonite Okay?

thx for the replies. so if i'm doing a wine expert kit (i've done about 4 in the past) do i even have to add the bentonite? can i add it at a later time if it doesn't clarify? if i don't have to add it, that's the way i'd like to go.. thx

    LHBS Bentonite Okay?

Was wondering if I can substitute LHBS bentonite for what comes in my wine-expert kit? I screwed mine up by adding hot water to it instead of the other way around.. ended up with a nasty clumpy mess that I ended up throwing out.

    Potassium Metabisulfite a yeast killer?

well, she appears to be alive! nice airlock activity at a cool 70F. i guess the yeast just needed a little time to wake up. thx for the responses Lorena. -mark

    Potassium Metabisulfite a yeast killer?

i was about to "stir the bucket" (no pun intended) but then i started thinking about how the instructions say to "sprinkle" the yeast on top of the solution and then "cover." since the airlock was bubbling every few seconds i figure it's off, although off at a slow start. i have a feeling it...

    Potassium Metabisulfite a yeast killer?

hehe that's pretty funny. i always just assumed to make it a closed vessel with an airlock so that i could keep out all the bad buggers! i just checked the instructions and it says "cover the primary container and wait 24-48 hours for fermentation to begin." hmmmm.. cover.. that's pretty...

    Potassium Metabisulfite a yeast killer?

btw, if i have an airtight lid with an airlock, how would it be getting O2 anyway? thx

    Potassium Metabisulfite a yeast killer?

howdy, thanks for the reply. i think it has to do with temp and time. i had everything sitting in the chest freezer when i started so it has pretty much been at 68-70F since starting. i went ahead and took it out to let it warm up to room temp tonight-- roughly 78-80F. hopefully it'll be...

    Potassium Metabisulfite a yeast killer?

Ok-- i've made several selection wines and haven't seen this problem. i'm getting a little worried. i've always used one-step for sanitizing, but the HB store guy coaxed me into using the metabis. i don't recall rinsing it out all that well after i sanitized. i'm trying to ferment at a...

    Chest Freezer for Fermenting

any issues with venting CO2 when fermenting in a chest freezer? i bought a 8-9 cu ft. freezer today from sears. i walked inside carrying a 7 gal carboy, 6 gal primary bucket, and 7 gal primary bucket. needless to say, i got some looks. all three fit in there nicely.. will get a temp...

    Chest Freezer for Fermenting

i was tossing the idea around of using a portable AC unit for maintaining proper fermentation temps.. well, what do you guys think about a chest freezer? like a 5.0 cubic foot one (door opens on top)? what is entailed in getting it to run at warmer temps instead of the freeze zone? is it...

Portable AC unit for fermenting/aging wine & beer

wow! a lot of replies. seems like the concensus is to use a used freezer. the only problem with that is i'm renting this house and if i buy a freezer, it's just one more thing i've gotta move. i was thinking about trying out the portable unit and if it totally sucks, take it back. it's hard...

Portable AC unit for fermenting/aging wine & beer

i've been tossing around the idea of getting a portable AC unit from home depot. the one i've been looking at runs about $400 and is rated for around 8-10,000 BTUs. i'm planning on sticking it in the laundry room as i'd be able to tie the drain into the washing machine drain and the exhaust with...

    Different carbonation levels between bottles

well i guess what's interesting is that i've never had a beer i've made have too low a carbonation, just noticed that occasionally i get a bottle with those "big" carbonation bubbles, kinda like you see in a soda. others have those nice beautiful tiny bubbles..
