    I'm planning on brewing a cider this weekend to be consumed around thanksgiving. I am planning on aging it over some wood chips and cinnamon sticks. The question is, for a 5 gallon bulk age for 3-4 months, how many cinnamon sticks should I use?

    Can I take a 1 gal recipe and multiply everything in it by 5 to get a 5 gal recipe? or a 5 gal*10 to get a 50 gal recipe? will it get too hoppy or anything?

    The barrel was used for aging beer already, but it clearly still smells of bourbon. I've dumped some more bourbon in there and slowly rotate the barrel every few days to let the wood soak some in/ kill any germs. There's no hint of souring in the barrel at all. I'm thinking a higher proof...
