    Forgot to add peptic enzymes.

    I'm making a blackberry wine and forgot to add peptic enzymes to my 1 gallon batch. I don't have any on hand so I was just gonna make it without it. Would it be ok without it? It's my first attempt at making wine.

    Brown sugar as a alternative to regular sugar ?

    Gonna be making a red grape wine for the first time. I've made multiple meads but never traditional wine. Is there any benifits taste wise when it comes to brown sugar or is it pretty much all the same. Looking to make a sweet wine.

    Racking mead to secondary

    I'm almost at a month into fermentation with both blackberry and blueberry meads. What's the best product to use to stop the yeast to allow the second round of fruit to be put into secondary?

    Added to much water into the start of my wort.

    I was suppose to make a 1 gallon batch of black IPA but since I added too much water I ended up with 1 full carboy and half of another carboy.
