Unfortunately, I'm at work so I don't have the OG/FG on hand. I'm doing 1 gallon batches. Is there a good way to test gravity without disrupting the fermenting process too much? I usually let it ferment for 2-3 weeks and then bottle. Are these 2 fruity beers lost or will they level back out?

Why would all my other beers turn out ok, but these 2 turn out fruity? Will that fruitiness go away?

Those were the yeasts I was given in the kits. I keep the room at 65-66 at night and 68 -70 during the day.

So im guessing its impossible to do with a 2.5g kettle then. Looked last night and I guess I had it wrong.

Can I do a 2.5g batch of BIAB with a max 4 gallon kettle? I want to mash in what water I can get in the kettle, do the sparge and boil process then dump water in the fermenter to bring up to 2.5g. Is that going to throw the numbers off or affect the beer?

Why before? Most of what I have read its been after because you mix it together in the fermenter and then pitch yeast.

If my kettle is 16quarts, can I just use that then add clean water to bring it up to 2.5 gallons after the wort has been cooled to 70 degrees?
