    Surprisingly it turned out great. Even with the yeast issue. The yeast arrived the following Monday with an "ooops" letter attached. >< All is well though - and now I have some extra yeast so I guess its a win-win.

    Im boiling BMs 3 crop cream ale right now and I just realized the safale 05 wasn't in the box with all the grain. Local brew shop only had "Coopers" brewing yeast. This is only my third brew =/ how drastically will this ruin this beer? Alternatively could I toss an airlock on this and wait...

    I tried my apfelwein right out of the carboy on day 45. It is delicious. I love the dryness - I'm really glad it doesn't have a strong apple flavor. It's perfect. My question - Should I carb it or not?
