    I've done a kettle sour in the grainfather. I put syran wrap over the wort and set the GF to maintain specific temperature for a few days. It certainly wasn't "sealed" from oxygen, but it worked.

    The official grainfather videos tell you to scrape (lightly) the bottom of the kettle as you get near the boil (and during the boil) to prevent protein build up that might make the heating element shut off.
