    I’d go with the larger pot, the more liquid = larger thermal mass. The more liquid you have, will tend to help keep a more constant temperature.

    This is a picture of my HTL control panel with the switching for the pumps, the panel for my BK looks almost identical except the switches in the front are disconects for the two heating elements. The switch on the right hand side of this panel is the disconnect for the HLT elements.

    Heating Fermenting Chamber

    I run (2) 15w heater belts on two 60L Speidel fermenters inside of my chest freezer/ fermentation chamber they don't seem to have any problems keeping beer at temperature in a 40 degree garage, If your fermenting in a insulated chamber remember it doesn't take many watts to maintain temperature.
