Too increase alcohol content in wine... is it just a case of increasing Stuart and yeast to give a higher ABV?

Added these to my lovely rhubarb wine which had a loverly pink blushould colour to it. The second they touched the wine the colour changed to a off yellow and fits not look good at all! Did I do something wrong?

So I've decided to wait until tomorrow to add the bentonite! How much bentonite would people recommend to add to 10 gallons of wine? It's looking good and smelling good just cloudy. .. don't want to ruin it at this stage!

It's a white. Why don't you add it to a red?

About to use bentonite for the first time instructions on bottle say 1 rounded teaspoon per gallon (I'm doing 10 gallons) mixed in Half a cup of water or wine. So I did 6 teaspoons in 3 cups of water. Not really sure I want to add this to my wine! !!!! It looks horrendous! Stressing! !!

The yeast is very cheap and one packet says for 25litres so what ever I didn't use just got binned I want sure about storage or how long it could be stored. I was wondering if you could add too much yeast or too little for that matter! Any thoughts?

I'm trying to make about 10 litres of wine. The yeast I have says for 25litres do i still use all of it or approx half?

It hasn't been bottled yet. Is due to be bottled this weekend. But don't want to until i have the issue cleared. .. pun intended. :-)
