    Man, I love Apfelwein

Many variations, e.g. the one you mentioned, have been tried. Some for better final taste after aging and some to make the product tasty in a smaller amount of time. Wanting a tasty product sooner eventually led me to create this recipe...

    Ed's Apfelwein fermentation time.

I doubt it will take any longer. It might even taste better if you like cysers. Yeast is notorious for being unpredictable though.

    Help with my mead

Tough situation. I've added water to meads that were too sweet and had them start fermenting again but they end up just tasting like watered down mead in the final product. Your best bet may be just to serve it mixed with soda water for a sparkling mead. Cutting sweet meads at serving is...

Pomegranate mead recipe - critique? advice?

I brewed 3 gallons of POM mead about a year ago and tried the first bottle a few months ago. The POM juice is expensive so I ended up doing 1 gallon POM juice in the 3 gallon carboy I had. The POM flavor is very slight and the slightness in flavor makes the natural flavor taste a bit odd but...

    Graff (Malty, slightly hopped cider)

For me, Graff is a cider. Everyone is different, but I think it tastes like commercial ciders I have had before. I thought every combination of sugar, juice, and yeast tasted like hooch. Really, i think apfelwein tastes like hooch until it is a year old and then it just tastes thin and...

    Adding Cinnamon to a Cider

I used 2 sticks of cinnamon in a 5 gallon apple cider, it was way too cinnamon y. Apple juice fermented by itself just doesn't have the body or texture to support a spice like cinnamon in my opinion. I think you could get the apple pie liquor taste tho from some of the flavor extracts they...
