    Slow Fermentation on a Wheat???

I've got my version of belgian white in the primary and the airlock is just barely bubbling along. I have read so many posts where people get vigorous and out of control fermentations with wheat malt and yeast so I am wondering why I don't get that. I have 6.6 lbs of wheat LME along with...

Using Knox gelatin for the 1st time

I forgot irish moss when I cooked my porter so I thought I would try Knox gelatin for the first time in the secondary. I read a few threads on it and it sounds simple enough. So I poured 1 packet into about 1 cup of warm water. Right away it started clumping up and was hard to work with, kind...

    Using Irish Moss

I am trying to get clearer beer and have been using irish moss at the end of the boil with extract recipes. I have an IC and usually get to pitching temps in 20-30 minutes. I may try adding some ice to the sink to help as well. My question is, does the irish moss do its job in the wort before...

Can Safale 04 Be Used For 5 Gal. Extract

I made the 5 gallon extract version of Biermuncher's Oktoberfast that was posted in the thread. I pitched Safale 04 yeast dry and my OG was 1.064 @ 74*. After 12 days in the primary it was 1.013 @ 70*. I thought that was a pretty amazing fermentation, 80% attenuation. I am now checking the...

    Using Flaked Oats, Wheat, etc.

I just brewed a light ale to add raspberries with later in the secondary. For 5 gallons extract, I boiled 1 lb of light DME for 50 minutes then added 3 more lbs of light DME, 1 lb of dry rice solid, and 1 lb of flaked oats for the last 10 minutes. I was hoping the extra rice solid would get...

    Chelada recipe

I want to try and make a Chelada style (Miller Chill) for the summer, only as an ale instead of lager. I was going to add 2 cans of frozen limeade from the grocery store to the boil. Does anyone have any idea if the sugar in the limeade will ruin the beer or give it a cidery taste?
