Imperial Stout Russian Imperial Stout (2011 HBT Competition Category Winner)

Anyone gone straight from primary and bottled? And if so was bottling yeast necessary? Concerned out my bulk aging capability; putting the beer in to my secondary would leave a lot of head space and risk oxidation(?) Could split the batch into 1gal fermenters and minimise head space I suppose..

    Rum soaked Oak in secondary

So I'm planning on bulk ageing for 3 - 6 months. I could start the bulk age, and then towards the end of the process before bottling take off 1gal, add the oak, wait a week and bottle? Trying to recreate a flavour I tried in a Cloudwater (UK) brewery imperial stout, it was fantastic, but they...

    Rum soaked Oak in secondary

I imagine the quantity of chips for a 1 gallon mini test batch would be veeeeeeery small - only downside is if it goes super wrong its a bit of a pain. I wonder if quality of rum makes a big difference to the overall taste? It's a BIG beer, and I wonder how much the complexities of a rum would...

    Rum soaked Oak in secondary

Will take a look at that, thanks! What did you do in regards to the secondary timing? Put the oak in at the start or leave it till the end of secondary?

    Strange fermentation behaviour (WLP002)

For anyone still interested I thought I'd update on the Gravity situation! Checked it for the first time yesterday and it had gotten down to 1.030 with one week left, sitting at around 9.5%. I'll leave it for another few days and take a reading, then another few days after. Seems to have...

    Rum soaked Oak in secondary

Hey everyone, I'm looking at soaking some rum chips in oak and adding it to my Imperial Stout during secondary bulk aging. I have a few questions about the specifics though; 1) Would soaking the chips in 40% dark rum for a week or so be enough to get the flavour, and sanitise? 2)...

    Strange fermentation behaviour (WLP002)

I thought the same, however it's what the recipe suggests: https://www.homebrewtalk.com/showthread.php?t=238807 Regardless, I'm in no real rush - the aim is to have it in bottles for christmas, so plenty of time.

    Strange fermentation behaviour (WLP002)

Planning on bulk ageing for 3 - 6 months, then bottling - likely with champagne yeast. Was also going to keep it in the primary for 30 days in accordance with the recipe

    Strange fermentation behaviour (WLP002)

Ah you're right. It's so hard not to obsess and over think. Will report back with the gravity in 2 weeks.

    Strange fermentation behaviour (WLP002)

The recipe, and brewing software, suggests an FG of 1.028. Should hopefully equal out at a 9.5% or so beer. I'll keep taking readings over the next 3.5 weeks though. i've had the temperature at 66F, although am tempted to move it down to 65F for the next few weeks - although considering the...

    Strange fermentation behaviour (WLP002)

I don't have a stir plate unfortunately - the starter wort was aerated, yeast pitched, and then shaken every now and then. I then cold crashed it for a day, decanted, let it warm and pitched. I suppose the active fermentation is a good sign though!

    Strange fermentation behaviour (WLP002)

I have to say I'm leaning towards getting a new vial of yeast (soonest it could come is Thurs), making another starter and pitching it at high krausen. I'd be fairly surprised if in its current state it's able to get to the FG. Definitely going to do some wider reading about yeast and the...

    Depends on the aroma

    Strange fermentation behaviour (WLP002)

Would pitching another starter help the situation? I'm sooort of aiming for fruitiness in the imperial stout, although nothing excessive.

    Strange fermentation behaviour (WLP002)

Are there any real negative effects of this on the beer? Or is it more a sluggish start?

    Strange fermentation behaviour (WLP002)

Old is old - I can't recall it's manufacturing date, but it's best by was around mid-may. Should I pre-emptively pitch more do you think? or wait and see if the yeast can cope, and work through it? Yes, fermenter is in a fermentation chamber, and temperature is being taken via a thermowell...

    Strange fermentation behaviour (WLP002)

Hi everyone. 2 days ago I brewed an AG imperial stout (OG: 1.100), plan on aging it ready for christmas! After vigorous aeration (done with a massive whisk) I pitched a 2L WLP002 yeast starter when it was at temperature - 66.3F, however, I've noticed a large lag time, and then strange...

HOWTO - Make a BrewPi Fermentation Controller For Cheap

Strange, I double checked wiring, but also took the fridge off of beer profile mode, and onto fridge constant, and it's working perfectly, even getting it to 0.5degC with no issues. I wonder if the issue was loose wiring that came undone very gradually?

HOWTO - Make a BrewPi Fermentation Controller For Cheap

Yes, up until now the BrewPi has been working perfectly. Its seemed to have stopped working mid-way through the cold-crash. I've had a look - the power LED on the relay is on, however, no cooling LED. EDIT: I've had a fiddle, and the script claims that the fridge is cooling, however the...

HOWTO - Make a BrewPi Fermentation Controller For Cheap

Hey everyone, just finishing up my first brew using the BrewPi, and have entered the cold crash phase. I have, however, noticed some issues. I set the BrewPi using the beer profile, with the fridge to go down to 2degC, and then hold there for a cold crash. This process started out fine, with...
