    quick update, i ended up doing 2 batches, i had no way to weigh the honey so i poured out a gallon and then just added water till i got the gravity i was looking for, for a dry mead. ended up with 3 gal 1.124 cuvee yeast and 4 gallon 1.104 montrochet batch. I'll update if it ever turns out

    yeah i tried to force carbonate semi sweet cider with campden tablets and a corney keg, it was stable for 3 weeks then i ended up with a case of tasty fountains.

    point taken on the yeast, is there anyway to avoid bottle bombs with semi sweet bottle carbonated mead, otherwise im stuck with dry mead anyway

    mead builder app is great, thank you guys, going to add 4 or 5 lbs of fruit, i was aiming for dry because i was to bottle condition carbonate a few, and i was worried a semi sweet would leave me with a case of bottle bombs, any thoughts on that? Montrachet yeast is supposed to top out at 13%...

    Just got it for Christmas, got the jacket also, 80% efficiency first brew out but I ended up with a half gallon over volume , the few American recipes I've seen have a 90 minute boil instead of the hour boil I was used too, second batch 76% efficiency, 90 minute boil was right on the money...

    You can try freezing it for an hour to kill the yeast, or gently boiling the bottles for 10 minutes, really anything else will require advanced techniques likeep force carbonating with a corny keg
