    I think for the next batch im going to use 4 lemons and 1 lime. Going to cut out the zest. Then add a little extra fruit when I rack it to the secondary. The current batch is way over powering. Aa for priming it i just add enough sugar till it tastes good.

    Just strained out the raspberries and transferred it to a secondary jug. Has a really nice aroma. Should be done in a few more weeks. I can tell this is a winning recipe.

    I just took a gravity reading it is at 7.5% at this point. It has a very good aroma to it. Going to rack it in a secondary and add the raspberries to it tomorrow. Cant wait for it to finish

    The more you brew the better you get at it. I'm sure if someone has been extract brewing for 10 years will have a better beer than someone who just starting doing ag. Do what you like and no matter what you brew you will get better at it.

    I ended up brewing my version of hard lemonade. Took 6 lemons and 2 limes zested all of them put 1.5 lbs of corn sugar and 6 oz honey in the stock pot. Used 1/2 gallon of water then added the zest 20 min b4 fo. Then I let the pot cool to approximately 80°f took the lemon/lime mashed them up...

    I'm going to make a 1 gallon batch of hard lemonade. My thought is that fresher is better I want to use fresh lemons for this. How much lemons do I need for a 1 gallon batch? I plan on starting off with a 2 gallon fermenter with the lemons in that then transfer to a 1 gallon gas carboy. Any help...

    I have been making fermented tea and I have been using brewers best flavor extracts in the brew. Usually add 1oz in the primary and adjust to suit my taste. You should be able to add these extracts any time you want.

    I have been experimenting with the tea again. I finally have a good Baseline on it. I used a peach tea with a pear extract in it. Added 4oz of honey and 1lb of sugar. I used 1 oz of the extract in it and 20 bags of tea.

    I've been using a CPAP machine for over 6 years and all I have to say is that it works well. There are things that you can do to help. Raise the head of your bed 2 inches don't eat 2 hours before bed time.

    I had over carb issues when I first started brewing I used to put the priming sugar in the bottles. Now I always add it to my bottling pale. It is much more consistent that way.

    I typically use bottles around 3 times for my home brews. I've been brewing now for over 6 years and have only had a few bottles break.

    From my experience when the bottle breaks at the bottom it is from a bad bottle. If you over carbed it then if a bottle breaks it will cause a chain reaction. That would hold true especially for high abv beers.

    Autumn Seasonal Beer Punkin' Ale

    Simcoe is a versatile hop and you can use it sparingly and get good results with it. I have been using it in a few batches(including a pumpkin beer). IMO you can utilize the flavor in the last 15 minutes of the boil.
