    Campden/Strawberry must question

Hey folks, I am about to make my first country wine, a strawberry wine (the first strawberry recipe from Jack Keller's website). I have campden tablets and so it doesn't seem like a bad idea to use them on the must to make sure there's no wild yeast problem. How do I do this? Is it...

Help- Can't tell Cascades from Perle...pellets

Hello, I have an ounce of cascade pellets and an ounce of perle pellets. Each is in an unmarked vacuum-sealed plastic and I can't tell which is which...can I tell them apart based on smell when I cut them open, or is that an impossible task at such a concentration? And if so, any keywords I...

Did I use cider w/preservatives? Meijer brand.

Hello, I've got really slow fermentation and I'm afraid I may have used cider with preservatives in it or something. Here's the story: I made a batch of Edwort's Apfelwein on September 17th, but I used Munton's Ale Yeast. After 3 weeks the gravity had dropped from about 1.056 to 1.044...

Help- Apfelwein at 1.04 after 4 weeks

I have a batch of Edwort's Apfelwein in the carboy and it is at 1.040 after 4 weeks. It was at 1.044 after 2 weeks. I cheated in that I pitched Munton's Dry Ale Yeast instead of Montrachet. Anyone have any suggestions at this point? Do I repitch? Or do I slog it out and see where it's at...

    oatmeal honey porter? extract+partial mash

hey there, I picked up a kit from my LHBS for a fairly straightforward porter: 8lb amber dme 1lb black patent malt 1.5oz Northern Brewer (60min) 1oz Tettnanger (2min) White Labs Euro. Ale Yeast I'm considering replacing a pound of the amber dme with a pound of honey and adding the...

Quick Noob Q: Made cider with Munton's Dry Ale Yeast...

Hey folks, I made Edwort's Apfelwein but found out I could only get ahold of Munton's Dry Ale Yeast once I had bought all the goods, so I pitched it figuring what the heck. At two weeks my carboy is fully cloudy but the krausen, which never got thicker than 3/4 inch, is relegated to a...

    LHBS...Lansing, MI???

Hey folks, I am in Lansing right now about to brew some edwort's apfelwein...I just need some wine yeast and corn sugar so I don't want to have to run out to Red Salamander or Things Beer. Is there ANY option in Lansing/East Lansing for a quick fix? Don't worry, I'll still be making my...

Rye beer w/ Juniper...Like Finnish Sahti?

Hey folks, I've been reading about the beer known as sahti in Finland. Michael Jackson wrote a fair amount on it (four or five articles). Here's one: Michael Jackson's Beer Hunter - Sweating up a suitable thirst It looks to be a high ABV beer that has rye thrown in, lightly hopped, with...

Hey Yoopers: KBC PickAxe Blonde clone?

I noticed that the PickAxe Blonde made by Keweenaw Brewing Company is an ale...what kind of direction do they go in to get an ale that, to my unrefined tongue, seems like a much tastier version of BMC standard American lager? Any thoughts? I guess I was under the impression that a beer of...

Question: Wheat beer with too high OG and FG

Hey everyone, I've made a wheat and the OG ended up a few points higher than expected and it seems to have finished fermentation a few points higher than expected. Here's the recipe I used (from a kit): 7lbs wheat/barley extract (it was 60/40 ratio...not sure which is the 60 or the 40...

"Let beer 'clean up after itself' in primary"...what does that mean??

Does anyone dare to throw some science on the idea of letting the beer "clean up after itself" for a while in the primary rather than racking it as soon as it hits the FG? I keep hearing this term but are people just throwing it around or is there some good evidence that it is the way to go...

Dry Hop IPA w/ Cascade and Fuggles...Your thoughts??

Does anyone think this is a good idea? I have 1.5oz cascade leaf and 1oz Fuggle pellet for dry hopping...what kind of character would this lend the IPA? The recipe (from a kit put together by the LHBS): 8lbs extra light malt extract 1lb crystal 20L malt 1/2 lb toasted malt 1.2 lb...

    Hello from the UP

Hey folks, this forum looks amazing in general. I'm only on my third batch but I've already learned a ton on here. Looks like a fair amount of brewers here from Michigan, and even a few from Michigan's better half! Very nice. Good luck!

Hey folks, I am currrently working on my third batch, an IPA. I am going to be dry hopping in my secondary with 1.5 oz cascade (whole hops) and I've got a grain bag for it. My question is, should I boil the grain bag for a few minutes before I toss the whole works in my secondary? It has...
