Being a complet newbie here but why don't you want to put oxygen in it ? What does it do?

Did it work out ok? My jaom has a staring smell to it. It's a bit like plastic not sure if that's normal

Ye I did think that it was a weird recipe after looking at others. I only made a gallon so it's not a massive batch. Think I might try to make another batch using a different recipe.
