    found beer

reclaimed a gifted six pack I gave a friend for Christmas 2015....he stuck it a cabinet and forgot about it. I chilled a Porter and poured it. I expected the worse after sitting for so long. It is the best Porter I have ever drank, much less made. Dark smooth great body and mouth...

    Ba$tard Bock

Life has just gotten way too fast here lately. But, I still wanted to do some sort of a darker, malty beer for Christmas. Swung by the big old HBS and took a look around. Picked up a Muntons Bock can kit, a pound of chocolate malt, 2 pounds of Dark DME, and some pecan flavoring. Did a mini...

    boiling priming sugar...

instructions say boil for 10 minutes...no big deal, but I want to why. It dissolves almost instantly. What does the longer boil time accomplish? Thanks

    Cider flavor help

OK...I make a batch of Graham's Dry English Cider, and then threw another batch on top the first yeast cake. No problems, finished dry, and I have about 10 gallons of cider. My English friends say it is "spot on" tasting like English Dry Cider. Great huh? Not really. I don't like this...

big weekend planned for landscaping and dirt work...rented the Bobcat, first day got a lot done, all roughed in...i can do that. Had a operator lined up for today to put the finishing touches on it. He called last night and he forgot he had something else to do today. It got pretty heated pretty...

    first time controlled ferment

No big build here...I took the easy way...Home Depot chest freezer and a Inkbot controller...got all "put together" in 10 minutes...appears to work like a champ. Got my first temp controlled ferment working away now. I keep running out to shop and checking on the temps, but they are holding...

    First Chadonnay

Bottled my first Chardonnay tonight....RJS Cellar Classic Winery Series Chile Chardonnay and I like it! Now, that could have something to do with there being 2 1/2 big ass glasses left in bucket and the loud buzzing in my ears! But, even though brand spanking newborn, it's pretty nice. It paired...

    Thinking of trying this...

I have a Malbec kit working now and it smells awesome. It should be ready to rack off of the lees in a few days. I am thinking of racking the Malbec, then doing a simple washing/clean up of the yeast cake. After which, using that washed yeast to start a Juice wine...maybe a mix of...

    Foodsaver degassing

I have been thinking about a vacuum pump to degas wine, but I did not want to lay out any cash for something that will only be used maybe a dozen times a year. I had a Foodsaver, that's a vacuum pump. Mine had an accessory port and I bought a 5 dollar hose. Hooked that up to a orange plastic...

    Yoopers Banana Wine

Pulled the cork on a bottle Christmas and it was a pleasant white wine. I had added cinnamon and a pinch of nutmeg...faint but there. Folks just could not get past the banana part and it not tasting like bananas! But, it was a nice bottle of wine. Will try it again next Christmas. Thanks...

    Cardamon spice

I made a Bourbon Oaked Porter and it actually came out pretty good....BUT....I had sampled one before that was just amazing...the back end of the taste was like sipping a bourbon and Coke. Mine has the bourbon, but no Coke. I have read where cardamon imparts a "cola like" flavor. Has anybody...

    Re-bottle??

I bottled a batch of plum wine and it was clear as a bell in the carboy. Went to box some up to give to the folks who gave me the plums and there is sediment in bottles. Wondering if I should open them and try to re-bottle it? Besides being a PITA, is there anything else I should be aware of...

    Cherry instead of oak wood

So...I have a red sitting in a carboy and it just needs a "something"...it's OK, just kinda one dimensional. Was thinking about adding more oak. A trip to the LHBS showed they only had oak chips. But, they did have some Cherry Wood Honeycomb sticks. I thought nawww...then I though why not...

    What kind of bottle...

What kind/color of wine bottles go with what type of wines? Is there a general rule of thumb? Like whites use clear, reds use green? Or does make any difference for storage? Thanks

    Sparkolloid

Working a plum wine made from plums that were pushed through a sieve....just about 6 # of mush...it was given to me that way. So, I made wine. After 3 rackings, it had cleared a little bit, but still very hazy. I had bought a bunch of beer and wine making stuff off Craigslist...had a bunch of...

    Whirlock

Used Whirlock for the first time with a no cool extract porter kit. There was a pile of stuff at the bottom of the pot, which I expected....strainer in pot and ran through a funnel filter into primary....thought I did a good job of keeping the crap of the primary. Plan was to primary three...

    Kit Question

Doing a Island Mist kit and the instructions say: Step 2 rack to secondary and leave for 10 days...OK fine. Step 3 specifically says DO NOT RACK, but add in the metabi, sorbate, f pack, and Chitosan and stir the crap out of the must My question...after 10 days in Step 2, why would you...

    Bottled my first kit...

Did a Island Mist Red Zinfadel...followed all directions and it was super clear right on schedule, so I bottled it yesterday. Man it was pretty....all those clear bottles of wine lined up in the kitchen window sill! My wine fan neighbor said it was too sweet for her taste and then poured...

    Still tinkering...

tinkering with this Welches grape wine....added acid, added tannins, more acid, more tannin....tried some oak chips...glycren...it all helped a little bit, not much. I read on here somewhere about boiling water and adding the tannin powder to it...so I did and thought what the heck, go big or...

Beer style with no to little carbonation

I am looking for a beer style with very little to no carbonation to brew for a beer loving friend that had the stomach band surgery...can't do carbonated drinks any more. I remember my Army days in Germany some of their beers had very little carbonation and almost no head.....in fact, the...
